4 Creative, Healthier Grilled Cheese Sandwiches

Grilled cheese. It's a comfort food that many people remember fondly from their childhood. Luckily, you don't have to completely give up on your healthy eating plan to enjoy this tasty dish as an adult once in a while. Check out some of these healthier versions of the ooey-gooey classic.

Grilled Zucchini and Mozzarella Sandwiches

Serves: 4

Ingredients:

  • 1 medium zucchini, trimmed and sliced lengthwise
  • 4 teaspoons avocado oil
  • Salt and pepper, optional, to taste
  • 8 basil leaves
  • 1 tomato, sliced thinly
  • 3 ounces fresh mozzarella cheese, thinly sliced
  • 8 slices bread of choice, whole grain or sprouted grain preferred

Directions:

  1. Heat a pan over medium heat. Coat zucchini with 2 teaspoons of oil and grill in pan until brown, about 2 minutes on each side. Remove from pan. Sprinkle zucchini with salt and pepper.
  2. Spread remaining oil on one side of each piece of bread. Stack zucchini, basil, tomato, and cheese on non-oiled sides of the bread to build sandwiches.
  3. Grill sandwiches on each side in pan until bread is browned and cheese is melted.

Kimchi Grilled Cheese Sandwiches

  • 8 slices bread of choice, whole grain or sprouted grain preferred
  • 2 tablespoons kimchi of choice, chopped
  • 3 ounces fresh mozzarella cheese, thinly sliced
  • 4 teaspoons avocado oil

Directions:

  1. Brush avocado oil on one side of each piece of bread. Build 4 sandwiches, oiled sides of bread out, with kimchi and mozzarella cheese. Heat a pan over medium heat and cook sandwiches on each side until bread is browned and cheese is melted.

Roasted Vegetable Grilled Cheese Sandwiches

  • 8 slices bread of choice, whole grain or sprouted grain preferred
  • 2 cups roasted vegetables*
  • 4 ounces goat cheese or mozzarella, thinly sliced
  • 1/2 cup spinach
  • 4 teaspoons avocado oil

  1. Brush avocado oil on one side of each piece of bread. Build 4 sandwiches, oiled sides of bread out, with cheese, spinach, and roasted vegetables. Heat a pan over medium heat and cook sandwiches on each side until bread is browned and cheese is melted.
  2. *Vegetable ideas include mushrooms, asparagus, peppers, and radishes. You can use any vegetable you like. Slice them, brush them with oil, and spread them in a layer on a baking sheet. Bake at 350° F until soft, 20-30 minutes, tossing halfway through.

Avocado Grilled Cheese Sandwiches

  • 8 slices bread of choice, whole grain or sprouted grain preferred
  • 2 avocados, scooped out
  • 2 cloves garlic
  • Salt and pepper, to taste, optional
  • 4 cups spinach
  • 4 ounces goat cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons plus 4 teaspoons avocado oil

Directions:

  1. Combine avocados, garlic, salt and pepper, spinach, mozzarella, and goat cheese in a food processor and mix, adding 2 tablespoons avocado oil slowly. Brush one side of each slice of bread with remaining avocado oil. Spread avocado mixture on non-oiled sides of 4 pieces of bread and top each with another slice, oiled side out.
  2. Heat a pan over medium heat and cook sandwiches on each side until bread is browned.
